Strawberry and Aronia Berry Jam
- 3 cups of chopped strawberries
- 1 cup of Aronia Berries
- 3/4 cup of Monk Fruit Sweetener (Golden)
- 2 tbsp of lemon juice
- 1 tbsp of Tohi Original
Place a ceramic plate in the freezer to use as a tool to see if the jam has finished cooking.
Roughly chop strawberries and Aronia Berries and place them in a large bowl. Add the sugar, lemon juice and Tohi into the bowl and mix thoroughly. Let the berries macerate in the mixture for about an hour.
Place the mixture in a saucepan and bring it to a boil in medium-high heat then reduce to a simmer stirring constantly.
Cook until the jam has thickened. Check to see if it has finished cooking by spreading a spoonful of jam onto the plate you have placed in the freezer. Run your finger through the spoonful of jam and then tip it over to the side. If the jam stays in place, then your jam is done.
